Cooking: Some love it, some hate it.

Personally, I adore being in the kitchen and creating new meals to enjoy. I’ve been on a health kick lately and have taken up meal prepping as well.

In case you don’t know, meal prepping is when you cook in bulk, separate the food in containers, and store it in your fridge. I love meal prepping because it helps me with portion control, is way more convenient than cooking every day, and is relatively cost-effective.

The main con of meal prepping is that the meals can get pretty boring by the third or fourth day. The ways I counterattack this is by prepping both exciting and delicious meals, as well as making only making three to four days worth. Some people meal prep for two days, others do it for seven days, but finding the right amount for yourself is key.

I tend to find most of my meals on Pinterest and some on Instagram. I have compiled a few of my faves here and hope you all enjoy!

White Chicken Chili

Ingredients:

  • 1 lb chicken breast
  • Yellow onion diced
  • Seasonings (salt and pepper, cumin, chili powder, Old Bay)
  • Chicken broth (as much or little as you want)
  • 2 15oz Northern beans (drained)
  • 2 4oz tomato and chile cans
  • Sweet corn
  • Cilantro
  • 4 oz cream cheese
  • ¼ cup half and half
  • Guacamole
  • Tortilla Strips

Directions:

  • Get your slow cooker and add the chicken breasts to the bottom of the pot
  • Add all seasonings, onions, beans, tomato and chiles, corn, chicken broth (to your liking, less will mean thicker chili, more will mean a soupy consistency), and cilantro. Stir
  • Cover and cook on LOW for 8 hours or HIGH for 3-4 hours
  • After the allotted time, remove the chicken and shred it. Return chicken to the pot
  • Add cream cheese and half & half, stir, cover, and cook for 15 min on HIGH

Notes:

  • I found myself adding seasoning to this dish before cooking, during cooking, and then near the end of the cooking process. This can likely be avoided by added a ton of seasoning at the start!

Chicken Fried Rice

Ingredients:

  • Garlic (powder)
  • Ginger (powder)
  • Onion (powder)
  • Red chili flakes
  • Carrots and peas
  • 2 eggs
  • Day old rice
  • Soy sauce
  • Fish sauce
  • Sesame oil
  • Salt and pepper
  • Cooked chicken
  • Sriracha
  • Green onion

Directions:

  • Heat up sesame oil in a frying pan, wok, cast iron skillet, or whatever you want to use to medium heat
  • Toss the vegetables, garlic, ginger, and onions until soft. Set aside.
  • Scramble the eggs and cook the chicken (if necessary)
  • Stir in rice
  • Drizzle soy sauce, fish sauce, and a little extra sesame oil
  • Add veggie mix back in, add salt & pepper, red chili flakes, and sriracha
  • Transfer to containers and sprinkle on some green onion pieces!

Notes:

  • Feel free to add other seasonings to this dish! My favorite part about meal prepping is experimenting and finding the best seasoning combinations
  • Chicken can be replaced with another protein source or left out completely
  • The rice doesn’t have to be a day old per se, but it needs to be cold. Hot fresh rice will turn mushy.

Sweet Chili Glazed Turkey Meatballs

Ingredients:

  • 1 lb ground turkey meat
  • Mushrooms
  • Turmeric
  • Paprika
  • Shredded carrots
  • Garlic powder
  • 2 eggs
  • 1/2 cup breadcrumbs
  • Green onion
  • Salt and pepper
  • ½ cup sweet chili sauce
  • 5 tbsp soy sauce
  • 4 tbsp rice vinegar
  • 5 tbsp sugar
  • 2 tbsp ginger powder
  • 1 tsp sesame oil

Directions:

  • Set oven to 375 degrees F
  • Mix all ingredients (turkey, breadcrumbs, eggs, onion, and seasonings) in a large mixing bowl by hand
  • Wet hands and start forming meatballs. I personally make mine pretty big so I have a total of 12
  • Put meatballs on a sheet pan and cook the meatballs for 25 min depending on meatball size
  • Heat a saucepan over medium heat and add sauce ingredients (sweet chili sauce, soy sauce, rice vinegar, sugar, ginger powder, sesame oil). Stir constantly and bring to a boil
  • Reduce the heat and simmer for 8-10 minutes
  • Toss meatballs in the sauce
  • Cook mushrooms, or any veggies, and rice as you like!

Notes:

  • Wetting your hands before forming the meatballs helps to prevent the ingredients from sticking to your hands
  • Be very heavy with the seasoning here, the ground turkey needs a lot of help in this department

Salmon and Veggies

Ingredients:

  • Frozen salmon patties (can be replaced with salmon filets)
  • Petite potatoes
  • Sweet corn
  • Asparagus
  • Seasonings of your choice

Directions:

  • Add extra seasoning to the salmon patty and cook as instructed
  • Cook sweet corn as instructed
  • Heat the stove top to medium heat, add olive oil and asparagus to a skillet
  • Cook for 7 minutes and season to your desire
  • Turn your oven to 425 degrees F
  • Heat the stove top to medium heat, halve the potatoes, add olive oil and potatoes to a cast iron skillet
  • Cook for 5-7 minutes then transfer skillet into the oven for 15 minutes or until the potatoes are tender!

Notes:

  • This is one of the easier meal preps I have. Most of my ingredients were frozen (corn and salmon patties)
